What shea butter is
Shea butter is the fat pressed from the kernels of the wild shea tree, Vitellaria paradoxa, and is defined by a high stearic–oleic content and an unsaponifiable fraction of typically 4–11 %. Two subspecies are recognised: paradoxa (West Africa) and nilotica (Uganda, South Sudan, Ethiopia). Trees take 15–20 years to fruit and remain productive for a century or more; fruit ripens in the rainy season.
The shea belt is a savanna band several thousand kilometres long from Senegal to Uganda and Ethiopia. A ranked summary of the largest producers is in shea-producing regions of West Africa. Collection is done by women from protected parkland trees, not plantations. Supply is therefore seasonal and dispersed, and quality is largely set at collection — delay or damp storage raises free fatty acid before anyone presses a kernel.
Nilotica butter is typically softer, higher in oleic acid and lower in melting point than West African paradoxa butter. The unsaponifiable fraction — triterpene alcohols and their cinnamic esters, karitene, tocopherols — is why formulators specify shea rather than a cheaper hard fat. See unsaponifiable matter.

How shea butter is produced
From fruit to kernel the sequence is common: collection, de-pulping, parboiling or boiling, sun-drying, de-husking, sorting and storage. Damp or delayed kernels hydrolyse; that is why free fatty acid is a raw-material parameter, not a press setting.
Traditional production crushes and roasts the kernel, mills it to a paste, kneads with water, skims the emulsion and boils to clarify. Yields and quality vary with skill and weather. Mechanical (cold-pressed) production cleans, conditions at low temperature, expeller-presses and filters. "Cold-pressed" means no heat is added at the press — not that the kernel was never warmed. Conditioning method affects how a lot is classified.
Pressing and filtration cannot lower the free fatty acid of shea butter; only neutralisation or physical refining removes it — which is why kernel handling before extraction decides the grade. Solvent extraction (hexane) exists industrially; EMI Agro does not use it.
Refining to N-RBD is neutralisation, bleaching and deodorisation, optionally followed by fractionation into stearin (for cocoa butter equivalents) and olein. The by-product of pressing is shea press cake. EMI Agro's own sequence is on the About process section.
Grades and quality
Grade A unrefined shea butter has the lowest free fatty acid and peroxide value; the grade is set by kernel handling before pressing, not by processing afterwards. Colour is not a grade. Odour is not a grade. "Organic" is a certification, not a grade. Adulteration with other fats, water or starch occurs in the trade — identity parameters (saponification value, refractive index, iodine value) are the first check.

Specifications explained
A shea butter specification is read through nine parameters — FFA, peroxide value, moisture, refractive index, saponification value, unsaponifiable matter, melting point, colour and iodine value — each measured by an AOCS or ISO method. Buyers specify numbers, not adjectives. Every shipment should carry a Certificate of Analysis.

Uses and applications
Unrefined Grade A is specified for cosmetics, soap, lip balm, hair care and body butter — anywhere the natural colour, odour and unsaponifiable fraction are part of the product. Refined N-RBD is specified for food manufacturing, chocolate (cocoa butter equivalent), pharmaceutical excipients and cosmetic bases that must be white and odourless. Shea press cake is a feed, soap and soil input, not a butter.
