Moisture Content in Shea Butter

What moisture content measures in a fat
A pure triglyceride fat contains no water. Any water in shea butter is carried over from the process (kernel moisture, water used in traditional kneading, condensation) or absorbed later.
Two different quantities share the COA line: moisture and volatile matter (mass loss on heating — water plus volatiles) and water content (Karl Fischer — water only). Oven results are typically slightly higher. Buyers should ask which method was used; a spec that mixes methods is not comparable.
Moisture content tells you how much water the process left behind in the butter — and water is the reagent that lets free fatty acid and mould develop in the drum.

Regional Grade 1 (≤ 0.05 %) sits near the limit of oven methods — Karl Fischer is preferred at that level. Refined butter is drier because vacuum deodorisation drives water off. A moisture result above the grade band usually indicates incomplete drying, settling or wet filling.

How moisture content is measured (AOCS Ca 2c-25 / ISO 662 / Karl Fischer)
Air oven (AOCS Ca 2c-25; ISO 662 method B): weigh about 5 g of melted, mixed sample into a tared dish; dry at 101–105 °C to constant mass; loss = moisture and volatile matter %.
Hot plate (AOCS Ca 2b-38; ISO 662 method A): heat with swirling until bubbling stops — faster, less precise, and unsuitable for very low levels.
Karl Fischer (ISO 8534): titration specific to water; the method of choice below about 0.1 %. The sample must be fully melted and homogenised — water settles to the drum bottom. See AOCS Ca 2c-25 and the COA interpreter.
Why moisture matters to buyers
Water plus triglyceride (with lipase or heat) yields free fatty acids — so free fatty acid rises during storage even if it was low at dispatch. Water pockets allow mould and yeast. Hydrolysis products then oxidise faster — see peroxide value.
Processing problems include spattering when melted, cloudy melted butter, and inaccurate hot-fill dosing. Commercially, at 1 % moisture a 20 t container carries 200 kg of water paid for at butter price.
Low moisture is what keeps a low FFA low: a dry Grade A butter stays Grade A in the drum; a wet one drifts toward Grade B.
Moisture is a process parameter
Unlike FFA (set by kernel history before pressing), moisture is decided by drying and by how the butter is heated, settled and filled after extraction — it is the one freshness parameter a processor fully controls.
Traditional wet extraction leaves more residual water than mechanical pressing followed by heating and settling. Roasting or warm-conditioning of kernels lowers moisture but shifts classification — see shea butter grades.
