How Shea Butter Is Refined: The N-RBD Process

N-RBD stands for Neutralised, Refined, Bleached, Deodorised. Here is what each stage does to shea butter, what it removes, and what it can never fix.

Summary

Refining takes unrefined shea butter through neutralisation (removes free fatty acids), bleaching (removes colour pigments and oxidation products) and deodorisation (removes odour volatiles under vacuum and steam), with washing, drying and filtration between. The result is white to off-white, odourless butter with very low FFA and peroxide value, and a somewhat reduced unsaponifiable and tocopherol fraction. Refining cannot change identity values (saponification value, refractive index, iodine value): it is not a fix for adulterated butter.

What N-RBD means and why buyers choose it

Refining standardises shea butter's colour, odour and acidity; it does not change what the fat is made of. N-RBD expands to Neutralised, Refined, Bleached, Deodorised. Food manufacturers, cocoa-butter-equivalent blenders, pharmaceutical excipient buyers and fragrance-sensitive cosmetic brands specify it because they need a white, odourless, low-FFA fat. The trade-off is honest: neutral colour and odour and low FFA and peroxide value, versus a reduced share of the unsaponifiable fraction that unrefined buyers value. Cold-pressed says nothing about FFA — pressing does not remove free acids; only neutralisation or physical steam-stripping does. See free fatty acid.

    Melt, filter and (where needed) degum

    Crude butter is melted and filtered to remove particulates. Degumming with water or acid is used for oils high in phosphatides. Shea is low in phosphatides, so degumming is often minimal or skipped. The step produces a cleaner feed; it does not change FFA or peroxide value.

    What changes: cleaner feed; no change to FFA or peroxide value.

    Neutralise free fatty acids with caustic soda

    Dilute sodium hydroxide is dosed against the measured FFA plus a small excess. The free acids form soap (soapstock), which is separated by settling or centrifuge. The dose is calculated from FFA per cent and oil mass — the caustic-soda dose calculator is the arithmetic, and free fatty acid is the measurement. See also neutralisation.

    The alternative is physical refining, which strips FFA as vapour during deodorisation and is suited to lower-FFA feedstock. High-FFA crude butter is usually chemically neutralised. Either route can be described as N-RBD when the later stages are applied.

    What changes: FFA falls to refined levels; some neutral oil is lost with the soapstock.

    Wash and dry

    Hot-water washes remove residual soap and caustic. Vacuum drying then removes the water that would otherwise drive hydrolysis and hurt bleaching. Peroxide value is unchanged at this point.

    What changes: soap and moisture removed; peroxide value unchanged.

    Bleach with activated earth or carbon

    Adsorbent — acid-activated bleaching earth, sometimes with activated carbon — is mixed under vacuum at moderate temperature, then filtered out. It removes carotenoid and chlorophyll pigments, residual soap, trace metals and primary oxidation products. Colour lightens; peroxide value drops because hydroperoxides are adsorbed or decomposed. A small amount of butter is retained in the spent earth.

    What changes: colour lightens; peroxide value drops; a little butter stays in the spent earth.

    Deodorise under vacuum with steam

    Steam stripping at high temperature and low pressure removes volatile odour compounds, remaining free fatty acids and some tocopherols. Odour becomes neutral; FFA falls further; tocopherol content falls; peroxide value approaches zero. Trans-isomer formation is possible if the temperature is excessive — that is a process-control issue, not a reason to reject deodorisation. See deodorisation.

    Polish-filter, cool and crystallise

    A final filtration removes residual earth. Controlled cooling then sets a stable crystal form and avoids graininess. There is no chemical change. See slip melting point.

    Optional: fractionate into stearin and olein

    Controlled crystallisation and separation yield a harder stearin fraction, used in cocoa butter equivalents, and a softer olein.     What changes: melting profile split; each fraction differs from whole butter.

    Test, release and pack

    FFA, peroxide value, colour, moisture, an odour panel and the identity values are checked against the refined specification. Pack under conditions that protect the butter from light and air; store it as the storage guide describes.

    What changes: nothing — this is the proof.

What refining changes (and what it cannot)

Refining moves FFA, peroxide value, colour and odour; it leaves saponification value, refractive index and iodine value where they were — which is why those three are the adulteration checks. See signs of adulterated shea butter.

Yields and losses

Every percentage point of FFA in the crude butter costs more than one point of yield in refining. Neutral-oil loss in chemical neutralisation is a multiple of the FFA removed — the refining factor. Bleaching-earth retention and deodoriser distillate add further loss. Low-FFA feedstock therefore refines with less loss; that is the raw-material problem.

Which grade should you buy?

Unrefined Grade A is for formulators who want the full unsaponifiable fraction and the natural colour and odour. Free fatty acid (FFA)

FFA measures hydrolytic breakdown of the fat; it is set by kernel handling before pressing, not by filtration afterwards.

Peroxide value (PV)

Peroxide value is the first oxidation marker; a rising PV on a stored lot is a storage or age problem, not a pressing problem.

Unsaponifiable matter

The unsaponifiable fraction — triterpene alcohols and related minors — is why formulators specify shea rather than a cheaper hard fat.

Colour

Colour is an appearance specification, not a grade: ivory to pale yellow is typical of unrefined shea; white is typical of N-RBD.

Saponification value

Saponification value reflects average fatty-acid chain length; an abnormal SAP is an identity or adulteration signal.

Refractive index

Refractive index is an identity check: a value outside the shea range suggests a different fat or a blend.

Slip melting point governs skin feel and the fat's behaviour in a chocolate or balm formula.
