7 Signs of Adulterated Shea Butter

Adulteration is an identity problem, not a quality problem — and identity values cannot be fixed by refining. Seven signs, and the test that confirms each.

Adulterated shea butter is usually diluted or substituted with cheaper fats, waxes or fillers.     1. Saponification value or refractive index outside the identity range

    Saponification value and refractive index are set by the triglyceride make-up of the fat. A foreign fat or mineral oil shifts them; refining does not move them, so an out-of-range value is an identity signal, not a process fault. Paraffin or mineral oil is commonly described as lowering saponification value sharply; some vegetable fats shift refractive index. Read both lines together on the batch certificate and compare them with the identity ranges on the specification pages.     2. Unusually low unsaponifiable matter

    Shea’s unsaponifiable fraction is high compared with most vegetable fats in the published literature. Dilution with a low-unsaponifiable fat drags the figure down; heavy refining lowers it a little, dilution lowers it a lot. A supplier who omits unsaponifiables from the certificate is often not testing the line — ask for it, or send a retain to a fats-and-oils lab. Pair an unusually low result with saponification value and refractive index before you treat it as proof; the four identity lines together are stronger than any one.     3. Colour too uniform or too white for an unrefined claim

    Unrefined shea is ivory to pale yellow with batch variation. A bright white or perfectly uniform “unrefined” lot has either been refined and bleached — in which case it is mislabelled — or cut with a white fat or wax. Colour alone never proves adulteration; it decides which laboratory test to run next. White, odourless butter can be honest refined N-RBD. The problem is an unrefined claim on a refined-looking lot. Check colour grading, run the grade checker, and read the grades page before you treat shade as a verdict.

    4. Odour that does not match the grade

    Unrefined Grade A has a mild nutty, sometimes smoky note. No odour at all on an unrefined claim, a paraffin or candle note, or a strong rancid note on a “fresh” claim are mismatches. Odour tracks free fatty acid and peroxide value, so pair the nose with those certificate lines rather than judging by smell alone. A refined N-RBD lot should be nearly odourless; that is process, not proof of purity.     5. Melting and texture behaviour that is wrong for shea

    Shea softens over a range rather than melting sharply. A lot that melts like a wax, stays hard at skin temperature, feels waxy or tacky, or separates into an oily layer over a hard residue suggests a foreign fat or wax. Graininess on its own is usually polymorphism after heat cycling, not adulteration — it reverses when the fat is fully melted and cooled quickly. Do not treat grains as a fake-shea test. Confirm slip melting point and iodine value; a melt that does not match shea, or an iodine value off the identity band, is the laboratory follow-up.

    6. Price far below the market for the grade claimed

    Grade A unrefined has a floor set by kernel price, yield and cooperative payments. A quote far below the range of several suppliers for the same grade, Incoterm and volume is a signal to test before paying, not a bargain. EMI does not publish prices. Collect at least three offers on the same basis, then ask for a batch certificate and identity tests before a deposit.     7. No batch-specific certificate of analysis

    A “typical values” sheet, an unsigned document, or a certificate without saponification value, refractive index or unsaponifiables removes the buyer’s ability to check identity at all. Treat that lot as unverified. Ask for the batch certificate first, then a retained sample, then a third-party test if the value of the order is large. Free fatty acid and moisture alone cannot prove authenticity — a diluted lot can still pass an acidity test. What shea butter is commonly adulterated with

Published detection papers and fats-and-oils identity texts describe categories, not named suppliers or countries. Commonly cited adulterants are cheaper vegetable fats and stearins (including palm-derived fractions), hydrogenated fats, mineral oil, paraffin or petroleum jelly, waxes, animal fats, and — in some artisanal lots — water or starch fillers.

Every common adulterant shifts at least one identity value — SAP, RI, IV or unsaponifiables — which is why those four lines on a COA matter more than FFA for authenticity.

What to do next

Refining fixes acidity and odour; nothing fixes identity — if SAP or RI is wrong, the lot is not shea butter as described. For a suspicious lot, read the batch certificate, check identity values in the interpreter, keep a retain, and send a third-party test if the order is large.
