Winterisation

Summary

Winterisation is a refining step in which an oil is cooled slowly so that higher-melting fractions crystallise and are filtered out, leaving a liquid that stays clear when chilled. It is used on liquid oils and shea olein fractions, not on standard shea butter.

Shea butter is a solid fat, so it is not winterised. The term appears only after fractionation into a hard stearin and a liquid olein, when the olein is winterised for clarity. Buyers who see winterised on a shea product should ask whether they are buying olein, not butter.
