Cocoa butter is polymorphic; the 34–38 °C range refers to the stable Form V crystal used in tempered chocolate.
Three rows decide most briefs. Melting behaviour: cocoa is a narrow 34–38 °C snap; shea is a 32–45 °C plastic range — see shea butter melting point. Unsaponifiables: shea at 4–11 % versus cocoa at 0.5–1 % — see unsaponifiable matter. Iodine value: cocoa 33–42 against shea 52–66, which is why cocoa oxidises more slowly — see iodine value.
Cocoa butter melts within about four degrees; shea butter melts across more than ten.
When to choose shea butter
- Spreadable body butters, hair butters and balms that must melt on contact with skin.
- Formulations that value unsaponifiables (triterpene esters, tocopherols).
- Soap: a mild, conditioning bar with a creamy lather.
- Cost stability: shea is less exposed to cocoa's commodity price cycles.
- A cocoa butter equivalent feedstock in chocolate (refined shea stearin).
Choose shea butter when the product must spread and melt on skin rather than hold a shape. That is the body-butter, hair-butter and balm brief. The unsaponifiable fraction is the other reason to stay with shea: it is the row cocoa cannot match. In soap, shea at 170–195 mg KOH/g gives a milder, creamier bar than a cocoa-heavy formula; recalculate lye in the shea saponification lye calculator.

When to choose cocoa butter
- Products that must hold shape and snap: lip-balm sticks, massage bars, solid lotion bars.
- Chocolate and confectionery where cocoa flavour and temper are the product.
- A firm, glossy finish without adding waxes.
- Longer oxidative shelf life in anhydrous products (iodine value 33–42 vs 52–66).
- When a natural chocolate aroma is wanted in the finished product.
Choose cocoa butter when the product must snap, hold shape or carry a chocolate note. Lip-balm sticks, massage bars and solid lotion bars use that Form V snap. Chocolate and confectionery are cocoa's home ground: flavour and temper are the product. A firm, glossy finish without wax, and a longer oxidative life from iodine value 33–42 versus 52–66, are the other cocoa wins.
Can you substitute one for the other?
Partial. Up to 25–30 % of the butter phase either way without reformulating; full swaps change hardness by about one step.
Shea and cocoa butter substitute for each other up to about a quarter of the butter phase without reformulation. Past 25–30 %, a full swap of shea for cocoa softens a stick by roughly one hardness step — compensate with a firmer wax or 5–10 % kokum butter. A full swap of cocoa for shea makes a body butter firm and slow to spread.
In the EU, shea is one of six vegetable fats permitted in chocolate up to 5 % of the finished product under Directive 2000/36/EC, with illipe, palm oil, sal, kokum gurgi and mango kernel. That use is refined, fractionated shea stearin, not unrefined butter. Chocolate containing permitted vegetable fats carries a "contains vegetable fats in addition to cocoa butter" statement. Formulation notes
Graininess is a shared risk if either butter is cooled slowly; shea is more prone at high shea loads, and cocoa needs tempering for gloss. A practical process is to heat both to about 70 °C, pour hot and cool quickly. Unrefined shea is nutty to smoky; cocoa carries a chocolate note; refined N-RBD shea is the neutral option.
